Colombia Honey
Explosive aromatics of dried fruit lead into tangerine acidity, and incredible sweetness as the cup cools. This coffee comes from Elkin Guzman, steward of the multi-generational Finca El Mirador. Trained in agricultural engineering, Elkin applies methodical research to coffee, pushing boundaries through experimental processing. This coffee was processed using his signature Natural-Hydro-Honey process, which begins with drying the whole coffee cherry, then rehydrating, depulping, and finishing as a honey—unconventional by design and remarkable in the cup. Grown at 1,550–1,700 meters in Huila, Colombia.
