Colombia Honey

Dried fruit leads into bright tangerine acidity, with a sugary sweetness that builds as the cup cools. This coffee comes from Elkin Guzman of Finca Las Guineas in San José de Isnos, Huila, where he carries on his family’s 70-plus-year farming legacy. Trained in agricultural engineering, Elkin brings careful research and experimentation to every harvest, and he shares what he learns with neighboring producers. This lot was honey processed: the coffee was depulped, then dried on raised beds under parabolic covers and turned often for an even dry, which draws out its rich, fruit-forward sweetness.
